What is bang bang cauliflower?
Wagamama's bang bang cauliflower is crispy cauliflower florets coated in its spicy firecracker sauce, with red and spring onion, topped with fresh ginger and coriander. It's a side dish, listed with the big flavour bites at £7.60, and it's plant-based.
The name comes from the sauce. Wagamama says “bang bang” refers to the spicy firecracker sauce, and that the dish is inspired by bang bang chicken, a street food.
Wagamama suggests eating it as a side with rice and noodle dishes, or alongside an Asian slaw, and says it goes well on the side of stir fries and curries.
Wagamama bang bang cauliflower recipe
This is Wagamama's own bang bang cauliflower recipe, with the method in our words. It serves two, takes 10 minutes to prepare and 20 to cook, and needs just one pan.
Ingredients
For the dish
- 4 tbsp vegetable oil
- 1 head of cauliflower, broken into small florets
- 1 red onion, finely sliced
- 2 spring onions, finely sliced
- 1 Wagamama firecracker sauce
- A thumb-sized piece of ginger
- ½ bunch of coriander
Method
- Heat the oil. Add the oil to a wok over a high heat.
- Brown the cauliflower. Once the oil is hot, add the cauliflower and red onion and stir-fry for 5 to 8 minutes, until browned.
- Add the spring onions. Toss them in with the cauliflower.
- Add the sauce. Stir in the firecracker sauce and simmer to heat through.
- Serve. Divide the cauliflower between two bowls and top with grated fresh ginger and coriander.
Tips
- The sauce is the recipe: Wagamama's version uses its own ready-made firecracker sauce and gives no from-scratch alternative, so we don't invent one.
- Use a wok over high heat: That's how Wagamama's recipe browns the florets, in one pan with no oven.
Quantities and timings from Wagamama's own recipe.
Wagamama's recipe has no batter or coating. The florets are stir-fried in hot oil until browned, then tossed in the sauce and finished with the ginger and coriander.

The chart marks it vegan and vegetarian and lists soya and sulphites as its allergens, with a may-contain warning for gluten and sesame. It isn't on Wagamama's gluten-free menu, and our allergy menu shows how the chart marks every other dish. For how 447 kcal compares with every other dish, see the calories page.
What to serve with bang bang cauliflower
Wagamama positions it as a side, so it suits a main that's mostly rice or noodles. A noodle dish such as the yaki soba, or a curry such as the katsu curry, follows Wagamama's own suggestion of rice and noodle dishes, stir fries and curries. At £7.60 it's the cheapest of the ten big flavour bites, the menu section it sits in, and dearer than the lighter bites such as the wok-fried greens (£6.80) and edamame (£5.10). The full menu has every side with its price.
Where to buy Wagamama firecracker sauce
Wagamama sells its firecracker sauce ready-made, and its recipe just says “1 Wagamama firecracker sauce” without saying which pack. Its shop lists a firecracker stir fry sauce and a firecracker curry sauce, and UK supermarkets including Tesco, Sainsbury's and Waitrose list the stir fry sauce (stock and prices vary by shop). Check Wagamama's listing before you buy, since the recipe doesn't name one. For a main that uses the same sauce, see the chicken firecracker curry, whose recipe also calls for one Wagamama firecracker sauce.
