Wagamama chicken katsu curry: crispy chicken on sticky rice with salad, under its katsu curry sauce

What is in katsu curry sauce?

Katsu curry sauce is the mild, lightly spiced sauce poured over breaded chicken katsu. Wagamama's home recipe builds it from onion, garlic, ginger, turmeric and mild curry powder, thickens it with a spoonful of flour, loosens it with stock and coconut milk, and finishes it with soy sauce, sugar and salt.

That's the from-scratch version. Wagamama also gives a shortcut, 120g of its katsu paste simmered with 120ml of coconut milk, and sells a ready-made sauce that it describes as mildly spiced, vegan and made with coconut cream and ginger.

The recipe and the restaurant's pot aren't identical. The home recipe uses soy sauce (soya) and plain flour (gluten) and has no mustard, while Wagamama's allergen chart lists the restaurant's sauce with gluten and mustard, so the calories and allergens further down are for the restaurant's pot, not for the recipe. In the restaurant the sauce comes with the chicken and yasai katsu curries, katsu udon and the katsu wraps on the lunch menu, and it's one of two sauce choices on the kids' chicken and yasai katsu.

Wagamama katsu curry sauce recipe

This is Wagamama's own recipe for the sauce in its chicken katsu curry, with the method in our words. The quantities make enough sauce for the two portions in Wagamama's recipe, and you can make it from scratch or take the shortcut with katsu paste.

  • Serves2

Ingredients

For the sauce from scratch

  • 2 to 3 tbsp vegetable oil
  • 1 onion, finely chopped
  • 1 garlic clove, crushed
  • A 2.5cm piece of ginger, peeled and grated
  • 1 tsp turmeric
  • 2 heaped tbsp mild curry powder
  • 1 tbsp plain flour
  • 300ml chicken or vegetable stock
  • 100ml coconut milk
  • 1 tsp light soy sauce
  • 1 tsp sugar, to taste

For the shortcut sauce

  • 120g katsu paste
  • 120ml coconut milk

Method, from scratch

  1. Soften the onion. Heat the vegetable oil in a saucepan and gently cook the chopped onion until softened. Add the garlic and grated ginger, stirring until fragrant.
  2. Add the spices. Mix in the turmeric and curry powder. Add the flour and cook for about a minute, stirring so it combines with the spices.
  3. Build the sauce. Gradually pour in the stock, stirring as you go to prevent lumps. Add the coconut milk and mix until the sauce is smooth.
  4. Season and strain. Stir in the soy sauce and sugar with a pinch of salt. Simmer until thickened, then strain through a sieve, a little at a time, for a smooth finish.

Method, shortcut

Combine the katsu paste and coconut milk in a saucepan. Bring to a gentle simmer, stirring until smooth and heated through.

Tips

  • Pick the stock: Wagamama's recipe says chicken or vegetable stock, so vegetable stock keeps the sauce vegetarian.
  • It contains gluten: The plain flour in the recipe contains gluten.
  • Simmer, don't boil: For the paste version, Wagamama's method is a gentle simmer until smooth and heated through.

Quantities from Wagamama's own recipe.

The from-scratch sauce is built on a spoonful of flour cooked with the spices and loosened gradually with stock, which is why it thickens as it simmers. For the crispy chicken, rice and salad that go with it, the full dish is on the katsu curry page.
