Wagamama firecracker chicken: the chicken firecracker curry with peppers, mangetout and hot red chillies on white rice

What is Wagamama firecracker chicken?

Wagamama firecracker chicken is the chicken firecracker curry on the main menu: chicken in Wagamama’s firecracker sauce with mangetout, peppers, onion and hot red chillies, finished with sesame seeds and shichimi and served with white rice. The menu describes the dish as bold and fiery, and the chicken version costs £16.80. Wagamama’s own recipe page uses the names “firecracker chicken” and “chicken firecracker curry” for the same dish.

The name is shared with other things, so it helps to know which is which. The hot honey fried chicken (£9.90) is a small plate that comes with a choice of sauce, and firecracker is one of three, alongside yuzu and teriyaki; with firecracker sauce it’s 842 calories. The spicy firecracker wings (£9.90, 747 calories) are new on the October menu and use a spicy firecracker and gochujang tamarind sauce. The bang bang cauliflower is a side finished in the same firecracker sauce. Wagamama’s firecracker gyoza and sauces in supermarkets are shop products, not menu dishes.

Wagamama firecracker chicken recipe

This is Wagamama’s own firecracker chicken curry recipe, with the method in our words. It serves two, takes 10 minutes to prepare and 30 to cook, and needs a wok and a pan for the rice.

  • Serves2
  • Prep10 min
  • Cook30 min

Ingredients

For the dish

  • 200g white rice
  • 200g diced chicken breast
  • 1 garlic clove, grated or minced
  • 1 tbsp vegetable oil
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 175g baby corn
  • 1 red onion, finely sliced
  • 1 bok choy
  • 80g mangetout
  • 1 tbsp sesame oil
  • 2 spring onions
  • 1 Wagamama firecracker sauce
  • ½ bunch of coriander

Method

  1. Prepare the vegetables. Chop the peppers into chunks, halve the baby corn and bok choy lengthways, finely slice the red onion and spring onions, and wash the mangetout.
  2. Cook the rice. Follow the packet instructions, then take it off the heat and put a lid on the pan to keep it warm.
  3. Fry the chicken. Heat the vegetable oil in a wok or large frying pan over a medium heat. Season the chicken with salt and pepper, add it with the garlic and stir-fry until fragrant.
  4. Add the vegetables. Once the chicken is cooked through, toss in the vegetables and cook for 3 to 4 minutes, until tender.
  5. Add the sesame oil and rice. Drizzle over the sesame oil, add the cooked rice and stir to spread the flavours.
  6. Add the sauce. Stir in the firecracker sauce and let it heat through until fragrant.
  7. Serve. Divide between two bowls and top with the spring onions and coriander.

Tips

  • The sauce is the recipe: Wagamama's chicken recipe calls for “1 Wagamama firecracker sauce” and doesn't say which pack, so we don't either. It gives no from-scratch version.
  • Prawns instead of chicken: Wagamama's prawn firecracker curry recipe uses 200g of prawns, 250g of rice and 120g of its firecracker stir fry sauce, and cooks in 10 minutes.
  • Not the restaurant layout: The home recipe stirs the rice through the chicken and vegetables. The restaurant menu lists white rice as part of the dish.

Quantities and timings from Wagamama’s own recipe.

Wagamama sells its sauce ready-made, and our bang bang cauliflower page sets out what its shop and the supermarkets list. Copycat blogs do publish from-scratch firecracker sauces, but those are home cooks’ reconstructions, not Wagamama’s.

The 5.2g of salt is 87% of the 6g adult reference intake, which is the figure most worth knowing on this dish. The chart lists sesame, soya and sulphites as allergens, with no may-contain warnings. The curry is on Wagamama’s gluten-free menu, so ask for the gluten-free menu when you order rather than assuming the standard version is gluten free. Our allergy menu shows how the chart marks every other dish, and the calories page compares 1,239 kcal with the rest of the menu.

How spicy is firecracker chicken at Wagamama?

Wagamama firecracker chicken is a curry the menu calls bold and fiery, and Wagamama’s recipe page says the dish suits people who can handle their heat. It doesn’t publish a heat rating, so there’s no number to set against other dishes. If you want a gentler curry, the menu describes the raisukaree as mild and warming, and you’ll find it on the full menu.

Firecracker chicken FAQs

Is Wagamama firecracker chicken gluten free?

Only if you order it from the gluten-free menu. The chicken firecracker curry is on that menu, along with the prawn and tofu versions, and its chart lists only sesame, soya and sulphites. The hot honey fried chicken with firecracker sauce is different: its chart lists cereals containing gluten. Wagamama says gluten-free dishes are prepared with controls to keep gluten below 20 parts per million, but it can't guarantee any dish is 100% free of gluten.

Is Wagamama firecracker chicken a main, a side or a starter?

The curry is a main, served with rice. Firecracker also appears on two £9.90 small plates, the hot honey fried chicken and the spicy firecracker wings, which sit with the big flavour bites and are nearer to starters or sides.

What allergens are in Wagamama's firecracker sauce?

The allergen chart lists the sauce on its own as an extra. It is marked vegan and vegetarian and contains soya and sulphites, at 278 kcal for a portion whose size the chart doesn't give. Its own row doesn't list sesame, though the curries' rows do.
