What does Wagamama put in its ramen?
A broth, noodles and toppings. Most bowls pair a rich chicken broth with wheat ramen noodles, then add toppings such as menma (fermented bamboo shoots), pea shoots, spring onion, kimchee or a tea-stained egg. The exceptions are the kare burosu, with udon in a curried vegetable broth, and the seafood and fish + chips bowls, in yuzu and curry broths.
The broth. Four bowls use a rich chicken broth, and the chilli chicken's is made spicy. The seafood ramen has a yuzu broth, the fish + chips a curry broth and the kare burosu a curried vegetable one. There's no tonkotsu, shoyu or miso broth on the menu, but you can ask to switch to a light or spicy vegetable broth, both marked vegan.
The noodles. Ramen is Japan's take on Chinese wheat-noodle soup, traced back to Yokohama's Chinatown in the late 1800s. The noodles are traditionally made with kansui, an alkaline water that gives them their bite and yellow tint. At Wagamama, the kare burosu is the odd one out with udon, and the gluten-free versions use rice noodles. Wondering how Japanese the rest of the menu is? See where each dish comes from.
The toppings. Pea shoots turn up on five of the seven bowls. The tantanmen gets menma, kimchee and chilli oil, and shares a tea-stained egg with the pork belly. Want more protein? Extra chicken is £3.50, and extra beef or pork £4.
Is Wagamama ramen spicy?
Only some of it. The chilli chicken ramen is the one listed with a spicy broth, plus fresh chilli. The tantanmen gets chilli oil, the kare burosu and fish + chips come with chilli on top, and the pork belly's kick comes from gochujang, a Korean chilli paste. The grilled chicken ramen lists no chilli at all.
How spicy is the chilli chicken ramen?
Noticeably. If you want a spicy ramen, start here: it's the only ramen the menu lists in a spicy broth, and it gets fresh chilli on top as well, with a wedge of lime to squeeze over. If you like heat, this is your bowl; if you don't, pick the grilled chicken instead, which lists no chilli at all.
This is the one for people who like their soup to fight back. If you're after a spicy chicken ramen, this is it; the menu calls it chilli chicken ramen. For £16.40 you get chicken on ramen noodles in that spicy rich chicken broth, piled with onion, beansprouts, coriander and chilli. It's 589 kcal, with 38g of protein and 7.7g of salt, and it's the bowl Wagamama shows you how to make at home, in the recipe below.
What's in the grilled chicken ramen?
Marinated chicken on ramen noodles in a rich chicken broth, with pea shoots, menma and spring onion. It costs £15.40 and comes to 498 kcal with 36g of protein, which makes it the lightest main on the whole menu. It's also one of three ramen on Wagamama's gluten-free menu, made with rice noodles.
Want ramen without the food coma? This is your bowl. It's the gentlest of the seven, with no chilli listed. Like every ramen, though, it isn't low in salt: 6.3g.
What is kare burosu ramen?
Wagamama's vegan ramen: shichimi-coated silken tofu and mushrooms on udon noodles in a curried vegetable broth, with pea shoots, carrot and chilli. It's £14.90, the cheapest ramen on the menu, and 706 kcal. Kare is the Japanese word for curry, which tells you what the broth is about.
One thing to know: it isn't gluten free, because the udon contains gluten.
What goes with ramen at Wagamama?
Something light, because a bowl of Wagamama ramen is already a full meal. Wok-fried greens (163 kcal) or edamame (280 kcal) keep things fresh, and gyoza turn it into a feast: chicken gyoza are £8.50 and 195 kcal. Going vegan with the kare burosu? The yasai gyoza, greens and edamame are vegan too.
- Wok-fried greens (163 kcal)£6.80
- Edamame with salt (280 kcal)£5.10
- Chicken gyoza (195 kcal)£8.50
- Yasai gyoza (208 kcal)£8.20
Wagamama ramen recipe
Wagamama's own chicken ramen recipe is its chilli chicken ramen: seared chicken and noodles in a rich ramen broth, spiked with a sriracha and sweet chilli sauce. This is the chilli ramen recipe in UK measures, grams and millilitres, and it serves two in about 35 minutes. Here's how to make Wagamama ramen at home, with the broth from scratch or from a Wagamama chicken ramen meal kit.
Ingredients
For the bowls
- 2 chicken breasts
- 200g soba noodles
- 500ml chicken stock
For the broth base
- 2 tbsp cornflour
- 150g butter or duck fat
- 1 tbsp fish sauce
- Or the broth paste from a Wagamama chicken ramen meal kit
For the chilli sauce
- 75ml sriracha
- 50ml sweet chilli sauce
- 2 tsp malt vinegar
- 1 tsp shichimi or paprika
To finish
- 40g beansprouts
- 2 spring onions
- ½ red onion
- 1 chilli
- Coriander
- 1 lime
Method
- Cook the chicken. Season the chicken breasts with salt and pepper and sear both sides in a hot pan, then move them to an oven tray and finish them in the oven until cooked through.
- Make the broth. Bring the chicken stock to a simmer and whisk in the cornflour, butter (or duck fat) and fish sauce until smooth. Using a meal kit? Stir its broth paste into boiling water instead, as the pack says.
- Mix the chilli sauce. Stir the sriracha, sweet chilli sauce, malt vinegar and shichimi (or paprika) together in a small bowl.
- Prep the toppings. Thinly slice the red onion, spring onions and chilli, and cut the lime into wedges.
- Cook the noodles. Boil the noodles as the packet says, then drain them.
- Spice the broth. Stir a tablespoon of the chilli sauce into the broth. Add more if you like it hotter.
- Build the bowls. Split the noodles between two bowls and pour the broth over. Slice the chicken and lay it on top with the beansprouts, onion, spring onion, chilli and coriander, with a wedge of lime on the side.
Tips
- Thighs work too: Wagamama's own ramen FAQ says boneless chicken thighs are fine in place of breast.
- Keep the heat adjustable: Put the leftover chilli sauce on the table so everyone can spice their own bowl.
- Keep the noodles springy: Cook them separately and add them to the bowl just before the broth, so they don't go soft.
Variations
- Grilled chicken style: leave out the chilli sauce and top the bowl with pea shoots and spring onion, the way the restaurant's grilled chicken ramen comes.
- Vegetarian: use vegetable stock and tofu in place of the chicken, and leave out the fish sauce.
- Quicker: make the broth with a Wagamama chicken ramen meal kit and add your own chicken.
- Ramen noodles: Wagamama's recipe uses soba, but ramen noodles work just as well.

Can you get gluten-free, vegan or halal ramen?
Gluten-free and vegan, yes, with caveats; halal-certified, no. Three bowls come in gluten-free versions with rice noodles, the kare burosu is vegan as it comes, and it's also the meat-free pick if you avoid meat that isn't halal certified.
Gluten free
Three ramen are on Wagamama's gluten-free menu, made with rice noodles: grilled chicken, gochujang pork belly and signature seafood. Gluten is handled in the kitchens, so Wagamama can't promise any dish is 100% gluten free.
Vegan
The kare burosu is the vegan bowl. You can ask for a light or spicy vegetable broth on others, though their toppings won't be vegan.
Halal
Wagamama UK isn't halal certified, and most of its ramen sit in chicken broth. The kare burosu, with tofu in a vegetable broth, is the meat-free choice.

Is Wagamama ramen healthy?
It depends what you're watching. Calories run from 498 kcal for the grilled chicken ramen to 1,006 for the fish + chips, and every bowl has at least 30g of protein. Salt is the catch: none has less than 5.1g. Compare the calories in every Wagamama dish.
How does Wagamama cook the chicken for its ramen?

How much is kids' ramen at Wagamama?
The kids' chicken ramen is £6.90 and the yasai ramen is £6.10, both dine-in prices.
So, which bowl is worth it?
First time? Go chilli chicken if you like heat, grilled chicken if you'd rather keep it light, and kare burosu if you skip meat. Whichever you pick, Wagamama ramen is a full meal in one bowl, and the recipe above gets the chilli chicken version onto your own table in about 35 minutes.
